Our organic spelt (Oberkülmer) flour is delicious, easily-digestible, whole grain goodness that is particularly good for breads, and really any recipes calling for all-purpose flour or whole wheat flour. A good source of dietary fiber, it has been said (on the internet) that spelt has a “complex history.” It seems spelt was wheat before there was wheat. It confused us too. Would someone please give spelt a book deal so we can get the real story?
